Zero Waste Chef at the Farmer’s Market

This weekend’s farmers’ market haul.

Every week, after I return from the market, I do some prep (and take this picture…). Prep work makes my week go MUCH smoother.

Wilt-prone greens like this beautiful lettuce (2 organic heads for $2!) need attention first. I cut the leaves up, put them in a large bowl of water, let them sit for a bit, then swish them around. Next, I pull the lettuce out, put it into a clean cloth produce bag and twirl that around outside (while I’m out there, I water my plants with the lettuce water in the bowl). Next, the bag of lettuce goes into the crisper drawer, where it stays fresh and crisp all week.

With minimal work, I now have two bags of prepped lettuce sans the plastic or price tag that comes with packaged convenience food. When I’m tired after a long day, I can just grab some greens and throw together a salad.

Like all things zero waste, a little bit of time spent planning and prepping is time well spent.
